We are so excited to announce the first of our chef's tasting menu nights and to launch this quarterly event our sous chef Keiran has created the menu.
Keiran's menu is in-keeping with the Cock O' Barton ethos - homemade, fresh, seasonal, sustainable, locally sourced using quality suppliers with zero/low wastage and Keiran was keen that this would be the basis of his menu, given the fact that we are just cooking this menu for one day - it was even easier to focus on seasonality.
Keiran's career has followed the well trodden chef path of starting off washing pots and then finding a passion for food. He completed his catering qualifications whilst gaining valuable experience in local restaurants before joining us in 2015. He has been with us ever since, working his way through the ranks to become a trusted sous chef and key cog in our kitchen.
Keiran is inspired by greats such as Marcus Wareing and Tom Kerridge and their values and passion in the kitchen. He enjoys all things food and drink and can often be found dining in Mediterranean eateries.. or his favourite (and our kitchen team's favourite) "Death by Tacos". He also loves football and is an avid Wrexham fan though is happy to cook for supporters of any club!
